Just an idea I've had to bring back life to the central market after hours and during holidays would be an evening market on Friday and Saturdays till 9 with a live music, street food and alcohol it allows the traders to have more opening hours and tourists something to do in the early evening hours, not to mention bring a bit of life brought back to what is an old school/ old managed market.
There are plenty of examples where this is done in cities around the world and jersey shouldn't be any different
